1 cup all purpose flour

Toss the peaches with the sugar, lemon juice and cornstarch and put into an oven-safe baking dish in the middle of the oven for about 10 minutes. Meanwhile, make the topping.
Stir together the flour, sugar, baking powder, and salt. Blend in the butter until it resembles coarse meal. Stir in the milk until just combined.
When the peaches come out of the oven, drop spoonfuls of the topping evenly over them. It is okay if the dough does not entirely cover the peaches, as it will spread as it bakes. Bake in the middle of the oven until the topping is golden brown and the filling bubbles around the edges, about 20 minutes.
